Nose
This is one of those whiskeys that keeps pulling you back to the glass. There's a lot happening here.
Right away I get cinnamon and sandalwood, followed by layers of fragrant baking spice. Underneath that are hints of coconut, red apple, and a soft sweetness that keeps everything from becoming overly spice-driven.
The fun part came later. After the glass had been sitting for a while and I was down to the last sip, something clicked. Suddenly it reminded me almost exactly of a bowl of Apple Jacks cereal. It wasn't something I picked up immediately, but once I noticed it, I couldn't un-smell it.
Palate
The first sip is surprisingly gentle for 114 proof. It opens creamy and woody before slowly building into sweeter flavors of cinnamon, rich molasses, and an almost rum-like brown sugar sweetness.
As it develops, I found notes of cassia bark cinnamon, red apple, toasted coconut, cloves, and cracked black pepper. The Mizunara and Amburana seem to play well together here, adding fragrant wood and spice without completely taking over the bourbon underneath.
The finish gradually turns up the heat with a pleasant warming spice and a mild drying sensation that somehow makes you want to take another sip almost immediately.
What I enjoyed most was how much this whiskey changed throughout the pour. It wasn't a whiskey that showed all its cards on the first sip. Every visit back to the glass seemed to reveal another little detail.
I also paired this with a Plasencia Reserva Original cigar since that's clearly what Koopers had in mind. It wasn't a bad pairing by any means, but neither seemed to elevate the other. The cigar muted some of the whiskey's complexity, and the whiskey softened some of the cigar's character. I suspect there's a better pairing out there, and finding it sounds like a pretty enjoyable challenge.

I've generally fallen into the "I enjoy it" camp—but with one condition. I want the Amburana to complement the whiskey, not replace it.
Thankfully, that's exactly what I found here.
The Amburana certainly makes its presence known, but it doesn't completely dominate the experience. Instead, it leans into an earthy, fragrant sweetness that works alongside the bourbon rather than covering it up.
More importantly, it stayed interesting from beginning to end. My favorite pours are the ones that continue to evolve as they open up, rewarding you for slowing down and paying attention. This is one of those pours.
If you're firmly against Amburana finishes, this bottle probably isn't going to change your mind. But if you're already a fan—or even just curious to see what a well-balanced Amburana finish can taste like—I think Koopers got this one right.
I'd happily pour another glass.
