Balcones Escarpment Tour Goes Behind the Scenes of Texas Whisky

A standard distillery tour usually shows you how whiskey gets made.

The Balcones Escarpment Tour gets considerably nosier.

On Thursday, August 20, 2026, Balcones Distilling in downtown Waco hosts its Escarpment Tour, a two-hour experience that takes guests beyond the normal visitor route and into areas of the distillery typically responsible for actually making, blending, and maturing the whisky.

The tour runs from 4 to 6 p.m. and is scheduled to return on September 10 and September 24, giving Texas whisky fans several opportunities to get a deeper look inside one of the state's best-known distilleries.

Beyond the Standard Balcones Tour

The Escarpment Tour is led by Alex Elrod, Balcones Brand Experience Manager, and Charlie McRae, National Brand Ambassador.

The experience begins with Balcones' history and production process before heading deeper into the Waco distillery.

Guests climb to the second-floor Distiller's Platform for an up-close look at Balcones' four custom copper pot stills—the enormous pieces of equipment responsible for turning fermented grain into the spirit that eventually becomes Balcones whisky.

And yes, they're considerably more impressive when you're standing next to them than when you're looking at them on Instagram.

From there, the tour moves into the Blending Room, where Balcones' blending team works on both the distillery's core lineup and limited releases.

Guests will also have an opportunity to taste fresh new make directly from the production process, offering a chance to experience the spirit before oak, time, and Texas weather have had their way with it.

Into the R&D Warehouse

The tour then climbs to the fourth-floor R&D warehouse.

This portion focuses on maturation and how Balcones shepherds its whisky through aging—particularly relevant when you're talking about barrels sitting through Central Texas weather.

It's also an opportunity to understand the decisions that happen between filling a barrel and eventually putting whisky into a bottle.

Those decisions can be just as important as distillation itself.

After exploring maturation, guests return downstairs to Balcones' Old Blending Room for a guided tasting.

The tasting includes Balcones' core single malts alongside two Limited Release whiskies, with discussion about the origins and development of the expressions.

You Get Some Gear, Too

Each Escarpment Tour guest receives several Balcones-branded items to take home:

More importantly, you've now tasted new make, stood beside the stills, visited the blending room, wandered through R&D maturation space, and finished with limited-release whisky.

That's a fairly productive Thursday afternoon.

A Few Important Requirements

This isn't quite the same physical experience as walking through the tasting room and pointing appreciatively at barrels.

Guests need to be willing and able to climb up and down four flights of stairs during the tour.

Balcones asks guests who require accommodations involving the stairs to contact the distillery directly ahead of the experience.

Participants must also wear closed-toed shoes and pants.

So perhaps leave the flip-flops at home.
