Whiskey Wednesdays at Maverick Whiskey: Inside the Barrel
What does a piece of oak have to do with the vanilla, caramel, spice and toasted flavors in your whiskey?
Quite a bit, actually.
On Wednesday, October 14, Maverick Whiskey in downtown San Antonio is hosting another installment of Whiskey Wednesdays with Michael Phillips, this time exploring the science of whiskey maturation.
Inside the Barrel
This week's session explores what happens to whiskey as it spends time inside an oak barrel.
Michael Phillips will cover the differences between raw, toasted and charred oak, along with the influence of Texas heat, temperature swings, oxidation and the angel's share.
Guests will also explore the flavors and aromas associated with maturation, including vanilla, caramel, toast, spice and oak.
It's an opportunity to better understand why whiskey tastes the way it does, rather than just confidently announcing that you're getting notes of leather and hoping nobody asks follow-up questions.

Merch purchases help support whiskey reviews, distillery visits and my ongoing efforts to turn drinking whiskey into something that sounds suspiciously like continuing education.
This Texas Bourbon T-shirt features the definition: “Like other bourbon, but daring, distinct, and full of swagger.” It’s the perfect whiskey shirt for Texas bourbon drinkers, distillery regulars, and anyone tired of hearing that good bourbon can only come from Kentucky.
Wear it to a whiskey festival, bourbon tasting, distillery tour, or anywhere people could benefit from being confidently corrected. It also makes a damn fine gift for the Texas whiskey lover in your life.
