Kooper Family Whiskey is a small, independent whiskey project that began in Austin, Texas in 2012 before relocating to Ledbetter, Texas. The move was intentional, taking advantage of a slightly more humid Texas climate that allows whiskey to mature differently than it might elsewhere. Rather than distilling in house, Kooper Family focuses on sourcing whiskey and shaping it through Texas aging, barrel finishes, and deliberate blending.
Their philosophy is simple. Let the whiskey speak for itself. This 8 year Straight Bourbon Whiskey finished in Sherry casks feels like a clear expression of that mindset.
This release is a tasting room exclusive with only 216 bottles produced, making it a fairly limited Texas whiskey offering. While the bourbon itself was distilled in Indiana, the final character is shaped through Kooper Family’s aging and finishing process in Texas.
Nose
The nose opens with classic bourbon aromas of vanilla, oak, and baking spices. As it develops, the Sherry cask influence begins to show with notes of Fig Newtons, stewed plum, and dark fruit. The Sherry finish adds depth and warmth without overpowering the underlying bourbon.
Palate
The palate follows the nose closely at first. Vanilla, oak, and baking spices lead the way. Mid palate, the whiskey shifts and reveals a burst of dark fruit that hits toward the back of the throat. Plum and fig come through clearly, joined by hints of toffee and candied sugar.
As the finish develops, spice and a light spearmint note emerge. The mouthfeel dries slightly, creating a fresh and clean sensation. The finish is long and evolving, lingering well after the sip.
Final Thoughts
This is a well balanced and complex Sherry finished bourbon that rewards patience. While I would have enjoyed a bit more intensity right at the initial sip, the real payoff comes in the finish. It builds, changes, and slowly fades in a way that feels confident and intentional.
This bottle was provided to me with no expectations attached. If given the opportunity to purchase it again, I absolutely would. Limited release, thoughtful execution, and a standout label design all help make this one worth seeking out if you find yourself at the Kooper Family tasting room.
