Briggs Distilling Visitors Guide | Driftwood TX
Briggs Distilling is preparing to open in Driftwood with a tasting room that feels less like a quick stop and more like a place to settle in for the afternoon. Located just south of Dripping Springs, this family-owned Hill Country distillery combines whiskey, cocktails, live music, food and plenty of room to spend time with friends and family.
I visited Briggs during a media preview ahead of its October 17, 2026 grand opening. Its launch whiskeys are currently sourced, blended and bottled onsite while the distillery completes installation of its own production equipment. The whiskey is worth exploring, but the immediate draw is the experience Briggs has built around it.

What to Expect at Briggs Distilling
Briggs feels like a family-friendly Hill Country hangout that happens to have a distillery attached to it—in the best possible way. There are billiards tables, board games, card games and large televisions for college football. Outside, the patio overlooks an open lawn and stage built for live music, while the nearby playground gives children something more entertaining to do than ask when everyone is leaving.
This is not a tasting room designed to rush you through a flight and send you toward the gift shop. Briggs clearly wants visitors to stay awhile. My wife and I spent several hours there during the preview, and it was easy to imagine meeting friends for a relaxed Saturday afternoon of drinks, live music and burgers.
The overall experience reminded me of a smaller version of Iron Wolf Ranch and Distillery: adaptable enough for a crowd, but comfortable for couples, families and small groups.

Getting There and Parking
Briggs is located just off Ranch Road 12 south of Dripping Springs, making it an easy Hill Country trip from Austin. A large red sign makes the entrance easy to spot from the road.
The first thing that caught my attention was the trio of large grain silos beside the building. The primary parking area is dirt, with concrete accessible parking spaces near the front entrance. Parking worked during the media preview, although the arrangement may feel tight during especially busy events.
Unlike some rural Hill Country distilleries, Briggs does not feel hidden away from civilization. It feels like a neighborhood gathering place—somewhere friends and families might meet for an afternoon rather than somewhere they need to formally tour.
The Tasting Room
The two-story tasting room occupies a handsome barndominium-style building with an industrial design and touches of 1950s and 1960s character. The retro-inspired Briggs logo fits the room well, especially alongside the vintage-style lights hanging over the first-floor bar.
The furnishings are an eclectic mix. Decorative pieces made from old farm gears share space with comfortable leather chairs, giving the room personality without making it feel overly themed. Upstairs, visitors will find additional seating and a view toward the outdoor stage. It is a casual place to sit, relax and enjoy the company you came with.
Large garage-style doors line the north-facing side of the building. When the weather cooperates, they can open the tasting room to the patio and surrounding Hill Country views. They were open during my visit, although the heat and humidity persuaded most guests that air conditioning was one of civilization's better inventions.
There is plenty of seating inside and outside. A small merchandise area near the entrance carries Briggs hats and shirts, while bottles can be purchased directly from the bar.

Whiskey at Briggs Distilling
Briggs is beginning with sourced whiskey while its own distilling operation comes online. The team said much of its whiskey comes from MGP, with additional whiskey sourced from within Texas. Briggs selects, blends and bottles its releases onsite in Driftwood.
The initial lineup includes three whiskeys:
Heritage Reserve: A signature blended bourbon with a soft, rounded and approachable profile. It delivers the familiar character many people expect from a classic bourbon and is very easy to drink.
Straight Rye Whiskey: Made with 51% rye and described by Briggs as a “bourbon drinker's rye.” It is sweeter and less spice-forward than many rye whiskeys, with a gentle sweet-mint note.
Wheated Bourbon: The most robust and well-rounded of the three during my tasting. It was less sweet than Heritage Reserve but offered a little more depth, making it my personal favorite of the lineup.
Flights and neat pours were available, allowing visitors to try all three before selecting a bottle.
These are sourced whiskeys, but Briggs is transparent about building toward its own production. For serious whiskey enthusiasts, the most interesting chapter may begin when the first Briggs-distilled barrels reach maturity. Unfortunately, whiskey operates on barrel time and refuses to acknowledge our impatience.
Cocktails and Other Drinks
Briggs knows how to make a proper old fashioned: no muddled fruit salad and no mystery mix trying to do the whiskey's job. The version I tried was balanced, straightforward and well constructed. I would personally enjoy it even more with a whiskey at 100 proof or higher, but that is my own preference for a more spirit-forward old fashioned.
Frozen cocktails were especially welcome during a hot and humid Hill Country afternoon. The frozen coffee was a standout and would be an easy order on a return visit.
Beer and nonalcoholic beverages were also available during the media preview, giving designated drivers and non-whiskey drinkers options of their own.

Briggs offers neat pours, cocktails-like a well put together old fashioned, and non-alcoholic drinks.
Food at AT Eatz Burger Joint
AT Eatz Burger Joint operates as the permanent onsite food truck. I ordered the Bacon Jam Burger with onion rings, while my wife tried the Waterloo chicken sandwich with fries. Everything was delicious, filling and reasonably priced.
The Bacon Jam Burger was good enough to become part of my reason for returning. Next time, however, the wings may require investigation. This is serious field research.
Family-Friendly Features
Briggs describes itself as a distillery born from family and built for families, and the property supports that idea. The outdoor playground is mostly visible from the patio and includes a slide, climbing wall and tunnel. It appears best suited for children around five and older; toddlers will likely need closer supervision.
Between the playground, lawn, games, food and nonalcoholic drinks, families have more to work with than they would at a traditional tasting room. Briggs feels like a place where adults can enjoy a pour without asking children to admire barrel-aging theory for three hours.
Tours and Experiences
Head Distiller Colton Weinstein gave us a brief look at the production area, which was still being assembled during the media preview. Weinstein brings more than 17 years of spirits-industry experience to Briggs, including nearly a decade as head distiller at Corsair Distillery.
The Briggs production floor includes two large jacketed pot stills, a 1,000-gallon cooker, large mash tuns, foeders and a small bottling setup. Bottles are currently filled and labeled largely by hand, with a larger bottling line potentially making sense as production grows.
Briggs is already bottling vodka and has discussed future plans for gin. The team had not finalized which spirit would be the first distilled on the newly installed whiskey equipment when I visited.
Public production tours had not been confirmed at the time of this guide, so visitors should not assume a tour is included with a tasting-room visit.
Briggs plans to host live music on weekends and community events throughout the year. The outdoor stage and lawn give the property room to accommodate concerts and larger gatherings without turning the tasting-room bar into the entire event venue. Check Briggs' current calendar and social media before visiting if live entertainment is an important part of the trip—or if you would prefer to hold a conversation without competing against a guitar amplifier.

The current lineup is sourced rather than distilled onsite, and the Briggs-made whiskey story will take years to fully develop. In the meantime, the spirits are enjoyable and the tasting room gives people plenty of reasons to visit beyond what is currently in the bottle.
Before You Go
Briggs officially opens to the public on October 17, 2026. Regular tasting-room hours had not been published when this guide was completed, so confirm the current schedule before driving to Driftwood. Public production tours had also not been announced.
The entrance is marked by a large red sign near Ranch Road 12. The main parking area is dirt, with concrete accessible spaces near the building. Parking may become tight during concerts and larger events, so arriving early is sensible if something special is scheduled.
Children are welcome, and the playground gives older children something to do while adults investigate the whiskey. Younger children will need closer supervision. Dogs are allowed, but confirm whether they are permitted inside the tasting room or limited to outdoor areas before bringing one.
AT Eatz Burger Joint is permanently located onsite, but food-truck and tasting-room hours may not always match. Check both schedules if a Bacon Jam Burger has become a non-negotiable part of the trip.
The first floor, patio, lawn and accessible parking spaces appeared wheelchair accessible during the media preview. I did not see an elevator to the second floor. Visitors with specific mobility needs should contact Briggs before visiting, particularly because much of the parking area is dirt.
Final Thoughts
Briggs Distilling is the kind of place where you meet friends and neighbors to catch up—and then realize you have been there for three hours.
Its most memorable feature is not one bottle or cocktail. It is how completely the property has been arranged around spending time together. Whiskey flights, properly made cocktails, frozen drinks, college football, live music, games, a playground and a very convincing Bacon Jam Burger all contribute to the experience.
The distillery's long-term whiskey identity is still taking shape, but Briggs has already succeeded at creating a gathering place. I left interested in what Colton Weinstein and the team will eventually make on their own equipment. I also left wanting another burger, which is a considerably shorter aging process.
