Meet the Makers: Garrison Brothers Bourbon Pairing Dinner with Dan and Nancy Garrison
There are bourbon dinners, and then there are bourbon dinners where the people who built the distillery show up with the whiskey.
On Thursday, August 27, 2026, Crossroads Saloon & Steakhouse in Fredericksburg hosts a special Meet the Maker Bourbon Pairing Dinner with Dan and Nancy Garrison of Garrison Brothers Distillery.
The evening features a five-course dining experience, with each course paired with a different Garrison Brothers expression.
Tickets are $250+ per person, and reservations are required.
An Evening with Dan and Nancy Garrison
This isn't simply a restaurant putting together a few courses and pulling some bottles off the shelf.
Dan and Nancy Garrison will join guests for the evening, providing an opportunity to experience Garrison Brothers bourbon alongside the people who have been part of the distillery since the beginning.
Dan founded Garrison Brothers in Hye in 2006, making it one of the earliest distilleries involved in building what would eventually become the modern Texas whiskey industry.
For anyone interested in Texas bourbon, that makes this a pretty unique opportunity.
You get dinner, bourbon, and access to the people responsible for making it.
Try getting that from the liquor-store shelf.
Five Courses Built Around Bourbon
The evening begins with a welcome reception featuring pâté foie gras crostini served on sunflower seed bread with cherry.
That will be paired with a Grilled Peach Smash Cocktail featuring Garrison Brothers HoneyDew.
From there, the dinner moves through four additional courses:
First Course
Pan-seared sea scallop with sweet summer corn soubise, crispy pancetta crumb, and smoked chili-lime oil.
Second Course
Crispy pan-roasted Texas quail with smoked Gouda grit cake and blackberry-bourbon gastrique.
Third Course
Cast-iron seared Wagyu Denver steak with black cherry and Cognac Bordelaise, silky celeriac purée, and charred maitake mushrooms.
Fourth Course
Vanilla bourbon crème brûlée and walnut bar with peach, house-made marshmallow fluff, and shortcrust.
Each course will be paired with a different Garrison Brothers expression, turning the dinner into an exploration of how bourbon can interact with everything from scallops and Texas quail to Wagyu and dessert.
In other words, this is probably not the evening to announce you're just having a salad.
A Little Something to Take Home
The whiskey doesn't entirely disappear when dinner ends.
Each guest will receive a Garrison Brothers gift bag following the meal.
More interestingly, attendees will also take home an exclusive custom-labeled Crossroads Garrison Brothers Boot Flask signed by Dan and Nancy Garrison.
That's a pretty nice souvenir from an evening of Texas bourbon.
And considerably harder to accidentally leave behind than a tasting note.
About Garrison Brothers
Located in Hye, Garrison Brothers Distillery has become one of the best-known names in Texas bourbon.
The distillery's whiskeys are shaped in part by maturation in the Texas climate, where dramatic temperature swings and plenty of heat create a very different aging environment from traditional whiskey-producing regions.
Garrison Brothers has built its identity around producing bourbon in Texas rather than simply adapting Kentucky whiskey traditions to a different ZIP code.
This dinner offers an opportunity to explore several of those expressions side-by-side—and hear from Dan and Nancy while doing it.
